Ranch Potato Pancakes



As a mom who cooks every meal at home every day, there comes a time when the same old dishes start getting old. Mashed potatoes, rice, or pasta as a staple leaves room to be desired at times, specially when a majority of your meals are vegetarian. 


Last night, I decided to switch it up as I noticed my son started getting annoyed with the same meal every few nights.  I decided to make potato pancakes with an extra twist. I adapted this recipe from an ebook called Vegetarian Quick & Easy Recipes Under 15 Minutes.


Ingredients
2 cups mashed potatoes
1 egg
1/4 cup cheddar cheese
1 T chopped parsley
1 t chopped basil
1 t salt
1 packet Ranch Mix Dressing
1/4 cup vegetable oil

Instructions
1. Make mashed potatoes ahead. When mashed potatoes are done, mix in the Ranch Mix packet.
2. Add the salt, basil, parsley, cheddar cheese, and egg into the mashed potato mixture.
3. Heat oil, and drop potato mixture by the spoonful onto the oil. Fry both sides until they are golden brown.
4. Place paper towel on a plate, and place pancakes on top. It will absorb the excess oil.
